We’ll prepare this traditional and versatile side dish and discuss safe food preparation and preserving methods. Participants will take home recipes & resources, as well as the products that they’ve helped to make. Please bring a one gallon container and three heads of cabbage (red or green). On the day of the class, participants will receive a $5 discount on the one gallon Ohio Stoneware crock.

THE PERFECT PIE CRUST

There’s a reason for the saying “as easy as pie.” Making a pie is easy and extremely gratifying, especially when guests ask for your recipe and remark that your crust is the flakiest they’ve ever tasted. In this class you will discuss various pie crust recipes, utensils, and ingredients, including gluten-free flours, and you will learn to make that perfect flaky crust. Be ready for the holidays with a new (or refreshed) skill! Students will go home with the pie crust they make in class.

MAKING TORTILLAS – Full

Learn how to make your own delicious organic corn tortillas with Three Sisters Nixtamal.  Using our fresh, stone ground organic corn masa, you will see how easy it is to make your own tortillas as well as sopes and gorditas.  You will also hear about the history of corn in Indigenous cultures throughout the Americas and the health benefits of this thousands years old, traditional corn cooking method called ”nixtimalization.”  The owners of Three Sisters Nixtamal, all residents of Sellwood, are leading the class and include a Naturopathic Doctor, an anthropologist from Portland State University and a professional chef.

FERMENTATION

We’ll prepare three different recipes, each selected to teach participants about safe food  preparation and preserving methods.  We’ll make delicious tangy Sauerkraut, sweet and crunchy Pickled Carrots and as-spicy-as-you-like Kimchee.  Participants will take home recipes, resources and the products that they’ve helped to make. Please bring a one gallon container and three heads of cabbage (either green or red). On the day of the class, participants will receive a $5 discount on the one gallon Ohio Stoneware crock.
