CREATE AN HERBALIST’S GARDEN – BASICS

Learn from Herbalist and life-long gardener Saundra Kamman about the herbs that you may already have in your garden (such as thyme, oregano, peppermint), what they can be used for in the herbal arsenal, and explore a few new ones (lemon balm, chamomile, and lavender) to add to your basic garden. We will focus on easy to grow herbs.

Did you know that thyme is excellent for respiratory issues?

Each herb will be presented with detailed herbal uses.

Take home a six pack of seeds that you plant in class. All materials provided.

PASTA MAKING

farfalleJoin Jason Tom for a delicious evening of pasta making. Jason is a chef at the Italian restaurant A Cena. Each month, he’ll be teaching a fun new pasta technique. All materials are provided, and you’ll take home some freshly made pasta at the end of the class.

CHEESEMAKING

This is a great foundation class for beginning cheese makers.
You’ll have fun learning the art of making soft and semi-firm cheeses that you can make at home, in your own kitchen, for a fraction of the cost of store bought cheese.
This class will be taught by Gayle Starbuck of Curds on the Way.
Gayle will start off students with hands on participation in making fresh Ricotta.
After your done making the cheese, you’ll add a drizzle of honey, a sprinkle of cinnamon and then taste it while it’s still warm.
You will learn the basic principles of soft cheesemaking, such as Crème Fraîche and Mascarpone, using Direct-set cultures, and either fresh milk from your own cow or goat, or pasteurized milk from your local market.
To finish up the class, Gayle will provide samples of fresh molded Chèvre (goat milk cheese) garnished with Herbs de Provence and a discussion on duplicating it at home.
Plentiful samples of Crème Fraiche and Mascarpone will also be provided. Your take home bag will have instructions, cheese making tips and recipes.

INTRODUCTION TO ORGANIC SOIL BUILDING

Are you excited to plant your garden this spring, but don’t know how to prepare your soil? Do you want to grow nutrient-dense fruits and vegetables, but can’t tell Dolomite from Azomite? Matthew Hoselton from Concentrates Northwest will demystify the process of amending your garden soil using rock minerals and organic fertilizers. This introductory class will cover the basics of soil composition, nutrient chemistry, and the soil-food-web.  You’ll also learn techniques that you can use to build fertility from natural materials, with a focus on the needs of soils in the Willamette Valley.

VODKA INFUSIONS

Join instructor and cocktail maven Marianne Colgrove for an evening of tasting, mixing, munching and fun.  After tasting various fruit, vegetable, herb and spice infusions and trying numerous cocktail ideas, each student will mix their own infusion to take home.  All materials are provided.  Students must be 21 or over.
