This weekly class spotlights the craft of knife building. The student will learn the craftsmanship necessary to create a custom knife. A variety of finished knife blanks and folding knife kits from renowned artisans will be available for purchase. After selecting a blade, students will make and affix handles of their choosing. Wood for handles is provided, but a variety of handle materials are available in-shop for an additional cost (i.e. bone, antler) or the student may bring their own.

This is a great foundation class for beginning cheese makers.
You’ll have fun learning the art of making soft and semi-firm cheeses that you can make at home, in your own kitchen, for a fraction of the cost of store bought cheese.
This class will be taught by Gayle Starbuck of Curds on the Way.
Gayle will start off students with hands on participation in making fresh Ricotta.
After your done making the cheese, you’ll add a drizzle of honey, a sprinkle of cinnamon and then taste it while it’s still warm.
You will learn the basic principles of soft cheesemaking, such as Crème Fraîche and Mascarpone, using Direct-set cultures, and either fresh milk from your own cow or goat, or pasteurized milk from your local market.
To finish up the class, Gayle will provide samples of fresh molded Chèvre (goat milk cheese) garnished with Herbs de Provence and a discussion on duplicating it at home.
Plentiful samples of Crème Fraiche and Mascarpone will also be provided. Your take home bag will have instructions, cheese making tips and recipes.

This class will cover how to make handmade bar soap from
scratch using natural, healing oils. Both cold and hot processes will be covered in class.
Topics include everything from the chemistry of saponification to natural ways to color
and fragrance your soap to how to do it all safely. Additional topics may include working
with goat’s milk and product formulation, so bring your questions! Includes written
procedure, recipes and soap to take home. Great for both novice and experienced soap-
makers. Class is taught by Sellwood Soap Company owner Rachael Gruen. 1 ½ hours.

This five week course introduces the old world craft of blacksmithing.* Here, the student learns the fundamentals of the trade: Shaping, forming, tapering, flattening, twisting and punching. Students will put these basics into practice by first hammering a traditional wall hook and then creating another small item of their choice (i.e. fire poker, candle holder). This class is the perfect introduction for those with an interest in moving metal or those who have merely dabbled in the past.
*This class is a prerequisite for Blacksmithing 102 and participation in Open Forge.

This is an informational and hands-on workshop, where Barb Burwell will share
the basics of fermentation and what’s needed to get you started. You will learn how
